Cut the pork fillet on an angle into 1.5cm-thick steaks. Season.
Heat the oil in a large heavy-based frying pan over medium-heat. Cook the pork for 4 minutes each side or until browned and just cooked through. Transfer to a plate.
Melt the butter in the same pan. Add the onion and cook, stirring, for 3 minutes or until starting to soften. Add the garlic and cook for 1 minute or until fragrant. Stir in the flour and mustard and cook for 1 minute. Gradually pour in the chicken stock, stirring, until well combined and smooth. Stir in the lemon juice, then the cream and spinach; season and bring to a simmer.
Return the pork steaks and any resting juices to the pan. Simmer for 5 minutes or until the pork is cooked through and the spinach has wilted. Top with lemon slices and extra spinach. Serve with fettuccine.
