Pan-fried in a fragrant spice mix, this jerk salmon tender, flaky and utterly delicious. Serve with a fresh homemade corn and black bean salad for a real flavour kick!
1.Combine ground coriander, dried thyme, cinnamon, chilli, allspice and garlic in a small bowl; rub all over salmon.
2.Meanwhile, cook corn in boiling water for 6 minutes or until tender. Drain; cool.
3.Lightly spray a large non-stick frying pan with oil. Cook salmon, over medium heat, for 3 minutes each side or until just cooked.
4.Meanwhile, remove kernels from corn. Combine corn with beans, tomato, avocado, onion, coriander and combined olive oil and lime juice in a large bowl.
5.Serve salmon with salad; accompany with lime wedges, if you like.
Black beans are available from specialty food stores. You can substitute kidney or cannellini beans, if you like  just be aware the sodium level of canned beans can be high, try to buy low-sodium wherever possible.
