Ingredients: 2 lebanese cucumbers (260g), chopped coarsely; 3 medium green capsicums (bell peppers) (600g), chopped coarsely; 2 stalks celery (300g), trimmed, chopped coarsely; 1 medium red onion (170g), chopped coarsely; 1 clove garlic, quartered; 1/3 cup (50g) roasted pine nuts; 1/2 cup firmly packed fresh coriander (cilantro) leaves; 2 teaspoon finely grated lime rind; 2 tablespoon lime juice; Avocado salsa; 1 small avocado (200g), chopped finely; 2 green onions (scallions), sliced thinly; 1 tablespoon finely chopped fresh coriander (cilantro) leaves; 1 tablespoon lime juice

Green gazpacho

This delicious chilled soup is so easy to prepare and makes the most refreshing lunch on a hot summer's day.

Ingredients

2 lebanese cucumbers (260g), chopped coarsely

3 medium green capsicums (bell peppers) (600g), chopped coarsely

2 stalks celery (300g), trimmed, chopped coarsely

1 medium red onion (170g), chopped coarsely

1 clove garlic, quartered

1/3 cup (50g) roasted pine nuts

1/2 cup firmly packed fresh coriander (cilantro) leaves

2 teaspoon finely grated lime rind

2 tablespoon lime juice

Avocado salsa

1 small avocado (200g), chopped finely

2 green onions (scallions), sliced thinly

1 tablespoon finely chopped fresh coriander (cilantro) leaves

1 tablespoon lime juice

Method

1.Blend or process ingredients until smooth; push through fine sieve into large jug; discard solids. Season to taste. Cover; refrigerate 3 hours.

2.Make avocado salsa close to serving time. To make avocado salsa, combine ingredients in small bowl.

3.Serve bowls of gazpacho sprinkled with salsa.
