Method

1.Place beef, 2 teaspoons of the sesame oil, garlic and sesame seeds in a medium bowl; mix well. Cover with plastic food wrap; chill for 10 minutes to marinate.
2.Heat a large non-stick frying pan over high heat. Cook beef, in 4 batches, stirring constantly for 2-3 minutes or until just cooked. Transfer to a medium heatproof bowl. Cool slightly.
3.For each roll, briefly dip a rice paper sheet in a bowl of warm water to soften. Place on a clean tea-towel. Arrange 1/4 of the beef, carrot, zucchini and a mint leaf along centre. Fold in 2 opposite asides, then roll up tightly to enclose filling. Set aside. Cover.
4.Combine remaining oil, juice, sugar, 2 1/2 tablespoons water and extra mint in a small bowl, stirring until sugar dissolves. Serve rolls with dipping sauce.

To keep beef tender, cook quickly over high heat. To blanch carrots and zucchini, plunge separately into boiling water for 1-2 minutes; drain. Refresh under cold running water.
