1.In a small food processor (or with a mortar and pestle), process 2 halved cloves garlic, 3 large seeded and chopped fresh green chillies, 2 cleaned and trimmed coriander roots, 3 chopped shallots, 1½ tablespoons fish sauce, 1 tablespoon finely grated palm sugar and ¼ cup lime juice until combined.
