Method
1.Beat softened butter in a small bowl with an electric mixer until light and creamy.
2.Beat in garlic, lemon rind, anchovy fillets and parsley until combined. Season with freshly ground pepper.
Freeze butter up to 3 months. Thaw in the fridge; stand 30 minutes at room temperature before use.
