2.To make mustard seed dressing; heat oil in small saucepan; cook seeds, stirring constantly, over low heat, until aromatic and softened. Place seeds, vinegar and sugar in screw-top jar; shake well.
3.Cook rice, turmeric and cardamom in large saucepan of boiling water until rice is tender; drain.
4.Meanwhile, cook lamb, in batches, in heated oiled grill pan until cooked.
5.Place rice in large bowl with nuts, sultanas, herbs and dressing; toss gently to combine. Serve pulao salad topped with lamb.
Ready-made rogan josh curry paste is available from most supermarkets; adjust the amount according to taste.
