Preheat oven to 200°C/400°F.
Coarsely chop olives and capers. Tear sourdough in pieces, then process into coarse crumbs; you need 2 cups. Combine crumbs in a medium bowl with the olives, capers and 1 tablespoon of the oil; season. Reserve 1 cup of the crumb mixture.
Cut a 3cm (1¼in) piece from the end of the haloumi; coarsely grate, then stir into the reserved crumb mixture. Set aside.
Cut remaining haloumi in half lengthways. Cut each half at 1cm (½in) intervals, three-quarters of the way through. Carefully fill between the cuts with the remaining crumb mixture.
Pour pasta sauce into a large baking dish. Place hasselback haloumi on top; sprinkle with reserved crumb mixture, drizzle with remaining oil. Bake for 35 minutes or until golden. Serve immediately.
