Method
1.Heat oil in a large wok on high. Stir-fry mushroom and white of onions 2-3 minutes, until tender.
2.Add spinach, green of onions, tamari, seeds and oil. Stir fry 1-2 minutes, until just wilted. Toss vinegar and cooked noodles through.
Accompany with a little extra tamari – a Japanese soy sauce, made without wheat.
