Method
1.Process biscuit pieces in a food processor until fine crumbs form. Add butter; process to combine.
2.Press firmly into base and sides of a 22cm fluted flan pan with removable base. Chill at least 30 minutes, until firm.
3.In a large bowl, using an electric mixer, beat cream, icing sugar and vanilla together, until soft peaks form. Keep chilled.
4.When ready to serve, gently remove biscuit base from case and place on a serving plate.
5.Spoon cream mixture into base, spreading to cover evenly. Peel and slice bananas; arrange over cream. Sprinkle with coconut and drizzle with honey.
To toast coconut, toss in a dry frying pan on medium heat 2-3 minutes, until golden; transfer to a plate to cool.
