Cut this Christmas slice into bite-sized pieces and top with macadamia brittle for a festive holiday dessert.

Dark chocolate and orange Christmas slice with macadamia brittle
Preheat oven to 180°C and lightly grease and line a 20 x 30cm slice pan and an oven tray.
In a large non-metallic bowl, combine mixed fruit, orange juice and orange liqueur. Set aside, covered overnight.
In a large bowl, using an electric mixer, beat butter and brown sugar together until pale and creamy. Add eggs, one at the time, beating well after each. Fold in plain flour, mixed fruit and liquid, chopped macadamias and dark chocolate.
Spoon into pan smoothing top. Bake for 50-55 minutes (cover with foil if getting too brown) cooked when tested. Cool.
Meanwhile, to make macadamia brittle; in a small saucepan, bring combined caster sugar and water to the boil, stirring until sugar dissolves. Boil without stirring for 8-10 minutes until golden. Remove from heat, stir macadamias through. Pour onto tray. Cool. Break into small pieces.
Drizzle slice with melted dark chocolate, sprinkle with brittle and cachous.
We used a mix of dried raisins, sultanas, currents, mixed peel, cranberries.
