Method

1.Preheat oven to 200°C (180°C fan forced). Oil oven tray, line with baking paper.
2.Spray one pastry sheet with oil, fold in half lengthways and in half again so you have a strip of pastry about 7cm (3 inches) wide. Using an 8cm (3¼-inch) cutter, wrap one long edge of pastry around outside of cutter, gather pastry together under cutter to make a tart case. Lower pastry, still wrapped around cutter, onto oven tray, gently ease cutter from pastry leaving a tart case. Repeat with remaining pastry sheets.
3.Bake cases about 10 minutes or until browned lightly. Press centre of cases down with the back of a spoon, lift onto wire rack to cool.
4.Meanwhile, combine sour cream, juice, the water and mayonnaise in medium bowl. Add avocado, tomato and prawns, stir to combine.
5.Divide lettuce among tart cases, top with prawn mixture.
