Method
1.Preheat oven to 200°C (180°C fan-forced). Grease 12-hole (¹/³-cup/80ml) muffin pan.
2.Place egg whites in medium bowl, beat with a fork. Stir in butter, almond meal, sifted icing sugar and flour, then pear.
3.Pour ¼-cups of mixture into pan holes, sprinkle with nuts.
4.Bake friands about 20 minutes. Stand friands in pan 5 minutes, turn, top-side up, onto wire rack to cool.
Friands are not meant to be light and airy, so the last thing you want to do is whisk air into the mixture.
