This date and oat slice recipe creates the perfect balance of sweet dates, hearty rolled oats and crunchy walnuts. Our classic date and oatmeal slice is a family favourite thanks to its simplicity and is perfect for afternoon tea. Plus, this easy date and oat slice comes together with pantry staples you likely already have at home!

1.

Preheat oven to moderate, 180C (160C fan-forced). Lightly grease and line a 20 x 30cm slice pan.

Combine dates, water and caster sugar in a saucepan over medium heat. Cook, stirring, 10-15 minutes, until dates have absorbed most of the liquid. Set aside to cool.

Meanwhile, in a bowl, using an electric mixer, cream butter, brown sugar and syrup together, until light and fluffy. Sift flour and soda over butter mixture. Fold in lightly. Add oats; mix well.

4.

Press half the oat mixture into base of prepared pan. Spread date mixture over the top.

5.

Mix walnuts through remaining oat mixture. Crumble over date mixture, pressing lightly. Bake date and oat slice for 30-35 minutes, until golden. Cut into slices when cold.

Recipe variation

The addition of walnuts adds a lovely crunch that elevates this simple date and oat slice recipe into something special. You can replace walnuts with pecans, if you prefer.

How long will date and oat slice keep?

This slice will keep for 2 to 3 days in an airtight container, but will stay fresh for longer in the fridge – that’s if there’s any left!
