Jacket potatoes are a family favourite, and our air fryer baked potatoes recipe is a speedy way to tender, creamy spuds. Serve these jacket potatoes as a side with butter or make it a meal with our nachos or baked barbecue beans toppers below.
Need dinner on the table ASAP? To reduce the air fryer time, par-cook the potatoes first. Prick them all over with a fork, then microwave on HIGH (100%) for 8 minutes or until soft. Bake in the air fryer for 15 minutes.

Preheat a 5.3-litre air fryer to 200°C for 3 minutes.
Prick potatoes all over with a fork. Taking care, place potatoes in the air fryer basket, then spray with oil and sprinkle with salt flakes; at 200°C, cook for 40 minutes, turning halfway through cooking time, until tender when pierced with the tip of a knife.
Transfer potatoes to plates. Cut a cross in the top of each potato, then squeeze upwards from the bottom to open up. Serve with lashings of butter or with one of the toppers.
NACHOS TOPPERS
Heat a 425g can Mexe Beans in a small saucepan. Top jacket potatoes with 25g corn chips, then the beans; scatter with 1 cup (120g) grated cheddar. Return topped potatoes to the air fryer basket; at 200°C, cook for 2 minutes until cheese melts. To serve, top potatoes with ½ cup (120g) sour cream, 1 fresh sliced jalapeño chilli and ¼ cup coriander leaves. Drizzle with your favourite chilli sauce. Season to taste.
BAKED BARBECUE BEANS TOPPERS
Place 250g halved cherry tomatoes in a medium saucepan with a 420g can baked beans, 1 tablespoon Dijon mustard and 1 tablespoon smoky barbecue sauce; cook over medium heat, stirring occasionally, until mixture is heated through. To serve, top jacket potatoes with baked bean mixture and ¼ cup (20g) finely grated parmesan. Season to taste.
