Tips for banana bread recipes

For a great-tasting banana bread, start with very ripe bananas. Crush them with a potato masher, keeping small visible chunks and ensuring a light hand when combining, for the perfectly textured loaf.

On the rare occasions where you may some leftover banana bread, transform it into delicious French toast! Whisk two eggs with ¼ cup milk. Heat a little butter in a medium frying pan. Dip the banana bread slices into the egg mixture, one at a time. Cook, uncovered, until browned on both sides.

How to ripen bananas

Keep bananas in the fruit bowl until they are as ripe as you like them. You can speed ripening by enclosing them in a paper bag with an apple or an orange. Once ripe, you can stop them from becoming overripe by wrapping them in newspaper and storing them in the refrigerator for up to 5 days. The skins may darken but the flesh will not be affected. Freeze overripe or bruised bananas in their skins in a freezer bag, then thaw and mash for making these banana bread recipes.
