Looking for easy camping meals? This quick and easy pork stir-fry makes a satisfying meal at the end of a busy day.
This one-pan recipe is perfect for a portable gas stove or campfire, and the shelf-stable ramen noodles make storage and meal preparation easier when camping.
Use your favourite style of noodles – hokkien and rice noodles also work well here.

Method
Combine pork, garlic and ginger in a medium bowl.
Heat oil in a wok or large frying pan over high heat; stir-fry pork mixture for 5 minutes, breaking up lumps, until browned. Add beans and corn; stir-fry for 2 minutes or until vegetables are almost tender.
Add sauces, noodles and the white part of the green onion to wok; stir-fry until heated through. Serve topped with coriander and remaining green onion.
Replace the green beans and corn with other vegetables you might have on hand, such as Asian greens, broccoli, asparagus or cabbage. Use drained canned baby corn instead of fresh, if you prefer.
