When you need bread in a hurry, Irish soda bread is the answer. Don’t be tempted to replace the buttermilk with regular milk, as the lactic acid combined with the bi-carb will ensure the bread rises sufficiently.
1.Preheat oven to 180°C/350°F. Grease oven tray.
2.Sift flours, salt and soda into large bowl; add any wholemeal husks from the sieve to the bowl. Stir in enough of the buttermilk to mix to a firm dough.
3.Knead dough on floured surface until just smooth. Shape dough into 20cm (8-inch) round; place on tray.
4.Using sharp knife, cut 1cm-deep (½-inch) cross into top of dough. Bake about 50 minutes.
5.Turn bread, top-side up, onto wire rack to cool. Serve with butter and jam, if you like.
