Method
1.Cut peeled kiwi fruit into eighths, discard seeds and core.
2.Blend or process pectin, water, juice and 1 tablespoon of the sugar until smooth. Add kiwi fruit; process until coarsely chopped.
3.In a large saucepan, combine kiwi fruit mixture with remaining sugar; stir over heat, without boiling, until sugar dissolves. Boil, uncovered, stirring occasionally, about 10 minutes or until jam jells when tested.
4.Tint with colouring, if desired. Pour hot jam into hot sterilised jars; seal while hot.
